Canh chem chép nấu cải là món ăn khá dân dã và quen thuộc. Món ăn không những lành tính mà còn có công dụng giải nhiệt cơ thể đó. Chem chép vừa mềm vừa ngọt quyện với vị thơm ngon của rau cải càng làm tăng hương vị cho món ăn.
Cho chem chép vào nồi, đổ nước ngập trùng trục, đun sôi. Đun cho đến khi trùng trục mở miệng là được.
Lấy chem chép ra tô, loại bỏ phần vỏ và lấy phần thịt của trùng trục cho vào chén, bóp phần ruột đen bỏ đi rồi rửa sạch lại chem chép. Phần nước luộcchem chép thì chắt lấy nước trong ra tô, để sang một bên.
Bắc nồi lên bếp, thêm 2 muỗng cà phê dầu ăn vào đun nóng, cho tiếp hành tím băm, gừng băm nhỏ vào xào thơm. Sau đó cho thịt chem chép vào xào chung, nêm 1 muỗng cà phê nước mắm, 1/2 muỗng cà phê hạt nêm.
Đổ nước luộc chem chép vào đun đến sôi thì cho rau cải đã cắt nhỏ vào. Đun nồi canh cho đến khi rau cải chín là được. Nêm nếm lại gia vị cho vừa ăn rồi tắt bếp.
